I've never been into left overs. Maybe once but after that, I just need a different flavor in my mouth. However, this summer, I'm home not working. That means I have the time to be inventive. It also means I need to be. My goals were to minimize spending and minimize waste.
Before leaving for NYC, Paul and I had a taco night. We ate almost everything, but did have some left overs. I froze those for him to have while I was on vacation.
Then this past weekend my family and I went to Texas Roadhouse for dinner. I took home everyone's left overs which included steak, mashed potatoes & chicken. The steaks, Paul and I had over the weekend. Then today, I was starving for lunch. I didn't want to go out to the grocery store just yet so I whipped up something quick and easy.
I had 1/4 chicken left over so I pulled it off the bone and shredded it up. I added some minced onion, salt, pepper and cumin. Then I went into the fridge and added about 1 Tbs of both salsa and mayo. I heated up a left over tortilla and stuffed it with the chicken mixture. I added some sliced tomato from our plant and stuffed my face. It was delicious and it helped me use more left overs!
I am going to make it a point to do this more often. I can reinvent left overs to help stretch their life. No one said you have to eat it the exact same way each time.
